Hey Veggies. Do you miss a good burger for your summer BBQ?

For 7 years, I was a veggie/pescatarian, which proved a little more difficult living in Spain. Slowly I reintroduced meat, but I still prefer not to. One of the things I missed out here in Spain is having a burger during one of the many BBQs we host or attend. So, I experimented with different BBQ options and add them here for anyone else who is missing good BBQ ideas. I have also thrown in some of my favourite salads and finger foods, enjoy!

Burger ideas

Chickpea and Carrot Burger

Ingredients
  • Chickpeas = 1 jar washed and drained
  • Oats = 150g
  • Shredded carrot = 3
  • Red onion = 1
  • Egg = 1
  • Salt = pinch
  • Pepper = pinch
  • Garlic powder = 1/2tsp
Method
This is dead easy. 
  1. Combine all the ingredients into a blender
  2. Shape into burgers
  3. Fry in a little olive oil
I have had these in a bun with all the trimmings. I have also had them alone with a dollop of sweet chilli sauce on the top. 

Tuna Fishcake Burgers

Ingredients
  • Tuna in water = 4 small tins (drain the water)
  • Red onion = 1 diced small
  • Chives = handful
  • Red chilli pepper = 1 thinly sliced
  • Potatoes = 4
  • Breadcrumbs
Method.
  1. Cook the potatoes and lightly dry mash (no butter or milk)
  2. Combine all the other ingredients into the mix
  3. Shape into burgers
  4. Fry in a little olive oil and if you want to, finish them off on the BBQ

Salad Ideas


Lemon & Mustard Salad

Ingredients
Dressing
  • Olive oil = 3 tbsp
  • Lemon Juice = 1 lemon
  • Mustard = 1 tbsp
Salad items of your choice - my favourites are..
  • Chickpeas = Jar
  • Sweetcorn = Tin
  • Black olives = Tin
  • Tuna = Tin
  • Onion
  • Pepper
Method
  1. This can make up one large salad or individual portions. 
  2. Add the dressing ingredients together and stir
  3. Add the chickpeas
  4. Add the other ingredients and stir in
If making these in jars for a batch, add things in layers,,,chickpeas at the bottom and work your way up to things like lettuce at the top. When ready to eat, tip the jar out onto the plate and the dressing will coat all the ingredients

Cooling BBQ salad

Ingredients
  • Red onion = 1
  • Cucumber = 1 Peeled and diced
  • Mint = a large handful, washed and chopped
  • Red wine vinegar = a healthy drizzle
  • Watermelon = Half a melon, cut into small cubes
  • Feta Cheese = A whole cheese block cut up
Method
  1. Add all ingredients into a bowl
  2. Drizzle with the red wine vinegar
  3. You're done!

Hot salsa salad

Ingredients
  • Large tomatoes = 3
  • Red pepper =1
  • Onion = 1
  • Parsley = Large handful
  • Lemon juice = One lemon
  • Chilli Powder = 1tsp
  • Cumin = 1 tsp
  • Black pepper = 1tsp
Method
  1. Dice the tomatoes, pepper and onion
  2. Add the juice of a lemon and the herbs
  3. Mix - dah dah!

Finger Nibbles

Spicy Mozzarella Balls

Ingredients

  • Mozzarella Balls
  • Fresh chillies
  • Fresh basil leaves

Method

  1. Drain the mozzarella balls from the container
  2. Slice up the chilli (mind those seeds and don't touch your eyes!!)
  3. Wash the basil leaves
  4. With a toothpick, pick up a mozzarella ball, then a piece of chilli and then a basil leave
  5. When you have finished, serve up

Cooling Cucumber Plates

Ingredients

  • Cucumber
  • Cream Cheese
  • Salmon (if they eat cheese - or alternative could be pipped olives)

Method

  1. Slice the cucumbers and lay them out
  2. Top each with a dollop of cream cheese
  3. Top the cheese with small slices of fresh salmon
  4. Sprinkle a small amount of cracked black pepper over them before serving
