Healthy(ish) Puddings & Sweet Snacks
Whether it be for after your meal, or simply on its own for those snack attacks, you may be looking for that perfect idea to feed that sweet tooth of yours..... Caveat, some are healthier than others, LOL. If you would like to share your own ideas with us, please comment below. No Bake Chocolate Tart
Ingredients
- Ground Almonds = 125g bag
- Cocoa Powder = 60g
- Honey = 150g
- Coconut oil = 3 TBS *melted*
- Chocolate bar = High cocoa 1 large bar
- Coconut milk = half a can
Method- Warm through the coconut milk
- Put the chocolate pieces in the milk to melt
- Stir in and put to one side to cool
Make the base
- Mix the cocoa and almond powder together
- Add the melted coconut oil
- Add the honey
- Keep stirring and folding until it becomes the right consistency
- Line your glass pudding glasses with the mixture to form a base
Pour the mixture over the bases and put in the fridge for a couple of hours until set.
Put the fruit of your choice on the top, or leave as they are.
Fruit Oat Cake
Ingredients
- Coconut butter = 1 tbsp
- Banana = x2
- Oats = 80g
- Almond milk = 300g
- Chia seeds = 3tbsp
- Shredded coconut = 2 tbsp
- Frozen fruit = bag
Method
- Line a pudding dish with coconut butter
- Line the base with bananas
- Add oats and milk and chia seeds
- Set in the fridge
- Top with frozen fruit
- Sprinkle with coconut
- Bake for 35mins at 180
Coffee Protein Cakes
Ingredients
- Oats = 165g
- Ground almonds = 100g
- Sugar = 50g
- Baking powder = 2tsp
- Vanilla extract = 1tsp
- Bananas = 2
- Eggs = 2
- Olive Oil = 2tbsp
- Coffee grains = 4tbsp
TOPPING
- Cream Cheese = tub (alternative THICK plain yoghurt)
- Vanilla protein powder
Method- Combine and mix well
- Bake for 40mins at 180
TOPPING : Mix together and add to the top of your cakes...simples!
Frozen banana
Ingredients
- Bananas
- Peanut butter
- Dark Chocolate
Method
- Peel and slice your bananas length ways
- Cover the bananas with peanut butter
- Melt the dark chocolate then drizzle over the peanut butter covered bananas
- Freeze until required
Healthy Pancakes
Ingredients- Oats = 1.5cups
- Baking powder = 2tsp
- Cinnamon = 1 tsp
- Almpond milk = 1cup
- Egg = 1
- Banana = 1
- Vanilla extract = 1tsp
Method- Grind the oats into flour
- Mix in all the ingredients into a liquid
- Make your pancakes!
Healthy Balls
Ingredients- Nuts of your choice = 100g
- Raisins = 85g
- Peanut butter = 2tbsp
- Flax seeds = 1tbsp
- Cocoa powder = 1tbsp
- Honey = 1tbsp
- Coconut = 50g
Method- Grind the nuts
- Add all the other ingredients
- Mix
- Create balls of the desired size
- Keep in the fridge until you want to eat them
Healthy Protein Bars
Ingredients- Oats = 300g
- Ground almonds = 1tbsp
- Peanut butter = 4tbsp
- Honey = 5tbsp
- Vanilla extract = 1tsp
- Almond milk = 3tbsp
Method- Blend the oats and ground almonds
- Mix together the peanut butter, honey, vanilla extract and almond milk
- Add the wet and dry ingredients together
- Put onto baking paper, cut into shapes and put into the fridge
Pineapple Puff
Ingredients
- Tin of pineapple rings
- Pre-made puff pastry (yes, I cheat!)
- Berries
- Egg
Method- Simply roll out the pastry into squares
- Put a pineapple ring in the centre
- Bring over the four edges of the pastry to meet in the middle
- Press down in the middle to make a slight indentation)
- Coat with egg
- Bake in the oven until golden brown
- I like to serve this with Icecream
Lemon Cake
I figure that this has lemon in it - so it must be healthy?... This has been added as my garden and many gardens around me here in Spain are inundated with Lemons, and we are looking for ways to use the lemons up! (I feel a new page coming on!!)
Ingredients
- Butter = 90g
- Sugar = 100g
- Lemons = 4 (juice and zest)
- Eggs = 2
- Flour = 100g
- Baking powder = 1/2tsp
Method- Put the oven on to 200
- Greaseproof your cases / tin
- Mix the butter and sugar
- Add juice and zest
- Add the eggs
- Blend
- Bake for 25min
